Generally, I use a color or value that will compliment my focal point. For instance if my focal point is a saturated yellow, then a creamy off yellow will make the saturated yellow seem even more so... Same for values, if the focal point is bright, a dark background serves to enhance that. Easy in theory, harder to do in life. I wipe and repaint backgrounds ALL the time!
